Chicken Salad with Cucumber Slices

This is a nice snack or light lunch. It is not Paleo but it is still healthier than hitting the fast food.
Chicken Salad with Mango Chutney on Cucumber Slices Recipe
INGREDIENTS
1/2 of a small apple (50g)
Mango Chutney, 1 TBSP
Real Mayonnaise, 2 TBSP
Organic Green Onions, 1 TBSP
Cucumber with Peel, 10 oz
Cooked Chicken Breast, 3 oz
Black Pepper to taste

DIRECTIONS
Finely chop the apple, green onions, and chicken breast. Add everything but the cucumbers in a dish. Add salt and pepper to taste. Stir and chill. When ready, wash and slice the cucumber into 1/4″ circular slices. Using slightly less than a tablespoon, top each slice.

SERVING SIZE: 2 cucumbers for about 32 calories per serving (this includes the cucumber)

Caveman Biscuits

Ingredients:
3 cups smashed up pork rinds
   (about the size of bread crumbs)
2 cups almond flour
1 pound ground turkey
1 cup chopped onion
3/4 cup chopped celery
2 1/2 teaspoons dried sage
1 1/2 teaspoons dried rosemary
1/2 teaspoon dried thyme
1 Golden Delicious apple, cored and chopped
3/4 cup dried cranberries
3/4 cup chicken stock
2 eggs

Directions:
1. Preheat oven to 350 degree F.
2. In a large skillet, cook the sausage and onions over medium heat, stirring and
     breaking up the lumps until evenly browned.
3. Add the celery, sage, rosemary, and thyme; cook, stirring, for 2 minutes to
     blend flavors.
4. Pour sausage mixture over pork rinds and almond flour in bowl.
5. Mix in chopped apples, dried cranberries and eggs.
6. Drizzle with turkey stock and mix. Use 1/4 cup measuring cup to scoop out
    and set on cookie pan.
7. Cook for about 20 minutes or until browned.
